ingredients:

  • 800g potatoes
  • 4 tbsp oil (for frying)
  • 1 onion
  • 1 tsp chili
  • 2 cloves garlic
  • 1/2 tsp pepper
  • 1 lime
  • 1/2 tsp sea salt
  • fresh cilantro

recipe:

  • peel potatoes, cut in medium-sized cubes
  • submerge potatoes in water, wait 20 minutes (extracts starch)
  • heat 2 tbsp oil in pan, add potatoes, roast for 20 minutes until crispy, put aside in a bowl
  • dice onions, mince garlic, add to pan with rest of oil and chili, fry for 3 minutes
  • add pepper and some cilantro
  • add potatoes back, roast for 5 minutes on low heat
  • add salt and squeeze lime over it
