source: variation on a recipe I learned in a vegan cooking course

ingredients:

  • 1 purple onion
  • 2 tomatoes
  • 4-5 medium carrots
  • 2 cups vegetable broth
  • 1/2 cup coconut milk
  • 2 garlic cloves (minced)
  • 1 tsp sea salt
  • 1 tsp oregano
  • 1.5 tbsp tamari or soy sauce
  • 1 tsp hot sauce

tools: pan, pot, blender or mixer

recipe:

  • cut onion, fry in a pan for 5 minutes
  • add garlic & tomato
  • add tamari, oregano, and sea salt
  • cook for 10 minutes

at the same time:

  • bring broth to boil in a pot
  • cut carrots, add to broth
  • boil for 10 minutes

then:

  • add everything together and boil down to reduce liquid slightly
  • blend in blender
  • stir in coconut milk
