source: variation on a recipe I learned in a vegan cooking course
ingredients:
- 1 purple onion
- 2 tomatoes
- 4-5 medium carrots
- 2 cups vegetable broth
- 1/2 cup coconut milk
- 2 garlic cloves (minced)
- 1 tsp sea salt
- 1 tsp oregano
- 1.5 tbsp tamari or soy sauce
- 1 tsp hot sauce
tools: pan, pot, blender or mixer
recipe:
- cut onion, fry in a pan for 5 minutes
- add garlic & tomato
- add tamari, oregano, and sea salt
- cook for 10 minutes
at the same time:
- bring broth to boil in a pot
- cut carrots, add to broth
- boil for 10 minutes
then:
- add everything together and boil down to reduce liquid slightly
- blend in blender
- stir in coconut milk
