ingredients
- avocado or coconut oil (for frying)
- 1 onion
- 2 tomatoes
- 2 cloves garlic, minced
- 2 tbsp soy sauce or tamari
- sea salt & pepper
- brown rice pasta (or regular pasta if preferred)

- dice onions, fry in oil for a few minutes (if using coconut oil, fry on medium heat, not hotter!)
- cut tomatoes and mushrooms
- add tomatoes, mushrooms, and garlic to pan
- add sea salt, pepper, tamari
- fry until most of the water from tomatoes has evaporated
- make pasta according to package instructions
- drain pasta and mix with sauce
